Tis the season for parties galore. There's one this Friday, next Friday, and the Friday after next. Here is an easy recipe that is perfect to take on the go. It's healthy (minus the chips..but hey, live a little) and vegetarian, score!
First step is to chop, chop, chop the cilantro, onion, and garlic.
In a large skillet, heat up a few swirls of olive oil. When the oil is heated add your onions, sugar, salt and pepper.
Next, add the garlic and cilantro. BE CAREFUL not to burn the garlic (about a minute) When the garlic is heated pour in your two cans of beans and squeeze in your 4 lime wedges.
When your bean mixture is heated you can begin transferring the mixture to a food processor. I use the Magic Bullet. You might need to work in batches. A few pulses and you will be set!
Your bean dip is done :) You can add cheddar cheese or cojita cheese if you please.
Next up, heat the vegetable oil in a deep sauteing pan until its nice a hot. In the mean time cut your tortilla into quarters. When your oil is heated, add four pieces of tortilla at a time flipping once or twice. I like mine to be golden brown, but you can adjust your consistency to your liking.
